THE TREASURE OF THE SIERRA MADRE for me. It influenced a lot of those greed-themed spag westerns years later. Technically though, it's not really a western. Maybe a neo-western!?

I'd go for LIBERTY VALANCE and THE SEARCHERS. All very old school!
Well, my top three are THE GOOD, THE BAD AND THE UGLY, ONCE UPON A TIME IN THE WEST and UNFORGIVEN, but I'd certainly give THE TREASURE OF THE SIERRA MADRE an honourable mention.

It's an excellent film in my opinion - and a neo-western in the opinion of the experts.
